This Valentine's Day Celebrate Fine Food and Romance at Sapphire Laguna

The night will commence with a tasting of seafood in four parts, comprised of crispy salmon bites, served with pickled radishes, spicy mustard aioli; lobster carpaccio with green apples, coconut-curry vinaigrette; chilled jumbo shrimp with cucumber-daikon salad, ume-shiso dressing; and hamachi avocado tartare with caviar and brioche.
Chef Azmin's entrees feature flavors for any palate:
- Pan Seared Sea Bass served with heirloom tomato, white bean crostini, watercress and parmesan pistou;
- Pan Seared Barramundi with nutty beluga lentils, artichoke fricassee, and fine herb salad;
- Pomegranate Glazed Colorado Lamb Sirloin served with ricotta gnocchi, creamed spinach, natural jus and dried fig relish;
- Pan Seared Beef Tenderloin and Bay Scallop Risotto, chanterelle mushrooms and tarragon-marsala sauce;
- Roast Chicken Breast and Rock Crab Raviolini with pea greens and lemon-thyme jus.
Conclude the evening with a tasting of two luscious desserts: the Double Chocolate Raspberry "Bombe" that will satisfy a chocolate lover's appetite, as well as the Mocha Chantilly with Cocoa Nibs and Mango Compote.
