World Class Chef Comes to Amani Beach Hotel, Tanzania

Luca Parente is taking time out from the Venissa Restaurant in Venice to spend one month training local chefs at Amani Beach Hotel. His challenge is to invent a simple but creative new menu inspired by the natural environment.

The young and very talented chef, Luca Parente, arrives in Tanzania this month from Venissa Restaurant in Venice to dedicate four weeks to training resident local chefs at Amani Beach Hotel. For the kitchen staff, many of whom have had no formal training, this represents an amazing opportunity to develop their skills and learn from the very best.

Luca is one of the rising stars of the culinary world, having worked in top-class international restaurants including St David's Hotel & Spa in Cardiff, Crockford's of Mayfair and the infamous Dorchester Hotel in London. While at The Dorchester Hotel, Luca trained under Aiden Byrne - Britain's youngest ever Michelin starred chef. His food has graced the table of some of the most famous and influential people in the world. Former high profile celebrities that have stayed at the Dorchester include Mariah Carey, Lady GaGa, Tom Cruise, Joan Collins and Arnold Schwarzenegger to name but a few.

Having grown up by the sea, he most likes to cook fish and to showcase the flavours of varieties often overlooked in favour of more expensive fish like sea bass or monkfish. Luca will therefore be in his element at Amani Beach Hotel where fresh fish is bought straight off the beach from the local fishermen and includes everything from calamari to red snapper and giant lobsters.

Luca's style of cooking is very simple, preserving the natural flavours of the food and using seasonal ingredients. He intends to look to the natural environment of Amani Beach and find new ways of using the edible flowers, herbs and home grown fruit and vegetables in the menu.

"I'm most looking forward to the chance to compare my style of cooking with that of another culture, to experience a new reality and, of course, to see a corner of paradise. My biggest challenge will be in passing on my knowledge and in creating a menu which is simple, creative but above all feasible for the chefs to take forward when I am gone. I can't wait to get started!"
