But why are these jars so special? The answer is very simple: the peculiar mastic within the capsule is thicker and more elastic than other mastics, because it is completely permeable to gases (and thus air), but at the same time it is also impermeable to liquids (and therefore water).

Therefore, during the boiling process, the air can expand when heated and escapes through the pores of the mastic, but no water can enter the jar. As a consequence, a vacuum is formed and the preparation can be preserved for an indefinite period.
