Spicy Breakfast Bake
12 bacon slices cut into ½" pieces
4 medium potatoes diced into ½" chunks
1 cup chunky salsa
4-8 eggs
Lay out four 12" square sheets of aluminum foil. Put ¼ of the chopped bacon in the center of each foil sheet and top with ¼ of the diced potatoes and ¼ cup salsa. Fold foil around food to create a thick cooking packet. Cook for 25 minutes over hot coals. Remove from fire, and open the top carefully. Drop in 1-2 eggs, close foil and let the packets steam until the eggs are cooked.
Pineapple Sweet Cakes
1 box of day old cake doughnuts
Large can of pineapple slices, drained
Brown sugar
Pecans
Dry coconut (optional)
Make individual packets by slicing each doughnut in half and putting a pineapple slice between the two halves, creating a sandwich. Lay each doughnut onto a sheet of aluminum foil and fill the doughnut hole with a mixture of brown sugar, nuts and coconut. Wrap tightly. Bake in medium coals for 10 minutes, flip over, and let cook another 10 minutes. Unwrap carefully and eat.
